A wine of good density ruby red, with brown, mahogany, biscuit hints. It has maintained its luster and clarity. The rim is fairly thick. The tears are fine, clear, abundant and regular. Smell: At once expressive, forthright and complex. There are notes of all families of fragrance: fruit, flowers, and spices. Taste: The attack is forthright, round and suave, soothing even. The intense aromas initially recall the complexity of the nose. There is leather and lightly charred wood, and roasted notes. The beauty of the vintage is revealed by its elegance rather than its full-flavor. The wine has an attractive aromatic range with a finish of remarkable elegance.
Cabernet Sauvignon is a red grape varietal known for its thick, durable skin, and the vine’s resistance to the elements. After the birth of the grape, the Cabernet Sauvignon varietal began to be adopted in parts of France by winemakers searching for more durable plants that were relatively easy to grow, and the grape found its champion in the region of Bordeaux.
Merlot is a dark blue-colored wine grape variety, that is used as both a blending grape and for varietal wines. Merlot grapes are identified by their loose bunches of large berries. The color has less of a blue/black hue than Cabernet Sauvignon grapes and with a thinner skin and fewer tannins per unit volume. Merlot grapes tend to have a higher sugar content and lower malic acid.
Cabernet Franc is one of the major black grape varieties worldwide. It is principally grown for blending with Cabernet Sauvignon and Merlot in the Bordeaux style, but can also be vinified alone. Cabernet Franc is lighter than Cabernet Sauvignon, making a bright pale red wine that contributes finesse and lends a peppery perfume to blends with more robust grapes. Depending on the growing region and style of wine, additional aromas can include tobacco, raspberry, bell pepper, cassis, and violets. In general, Cabernet Franc is very like Cabernet Sauvignon, but buds and ripens at least a week earlier. The vine is vigorous and upright, with dark-green, 5-lobed leaves. The winged bunches are elongated and small-medium in size. The berries are quite small and blue-black in color, with thin skins. Cabernet Franc can adapt to a wide variety of vineyard soil types but seems to thrive in sandy, chalk soils, producing heavier, fuller bodied wines there. The grape is highly yield sensitive, with over-cropping producing wines with more green, vegetal notes
