The 2013 vintage is emblematic of the freshness, elegance, superb balance and subtle tannins that characterize the wine produced in this new Himalayan terroir.
Ao Yun means "flying above the clouds" or "roaming above the clouds." The name refers to the thick, wandering clouds of this incredible region and celebrates the birthplace of the legend of Shangri-La. Hidden paradise among the Himalayan Mountains. The vineyards are located just below the sacred Meili Mountain at altitudes soaring to 8,530 feet in height, to allow the Cabernet Sauvignon to give its finest expression of a unique terroir. Ao Yun is made from 314 blocks on 68.4ac of vineyards. All viniculture processes are conducted entirely by hand.
Cabernet Sauvignon is a red grape varietal known for its thick, durable skin, and the vine’s resistance to the elements. After the birth of the grape, the Cabernet Sauvignon varietal began to be adopted in parts of France by winemakers searching for more durable plants that were relatively easy to grow, and the grape found its champion in the region of Bordeaux.
Cabernet Franc is one of the major black grape varieties worldwide. It is principally grown for blending with Cabernet Sauvignon and Merlot in the Bordeaux style, but can also be vinified alone. Cabernet Franc is lighter than Cabernet Sauvignon, making a bright pale red wine that contributes finesse and lends a peppery perfume to blends with more robust grapes. Depending on the growing region and style of wine, additional aromas can include tobacco, raspberry, bell pepper, cassis, and violets. In general, Cabernet Franc is very like Cabernet Sauvignon, but buds and ripens at least a week earlier. The vine is vigorous and upright, with dark-green, 5-lobed leaves. The winged bunches are elongated and small-medium in size. The berries are quite small and blue-black in color, with thin skins. Cabernet Franc can adapt to a wide variety of vineyard soil types but seems to thrive in sandy, chalk soils, producing heavier, fuller bodied wines there. The grape is highly yield sensitive, with over-cropping producing wines with more green, vegetal notes
Since Bordeaux red blends are often quite structured and tannic, they pair best with hearty, flavorful and fatty meat dishes. Any type of steak makes for a classic pairing. Equally welcome with these wines would be beef brisket, pot roast, braised lamb or smoked duck.
